Okay so this isn’t really a recipe but its a REALLY good idea! Charlotte suggested to me the other day that I should pour some water in the tin that I roast my chicken in with a bit of lemon and seal really tightly with foil so the chicken steams and infuses with lemon, honestly I feel like I have been roasting chicken wrong for all of my life!
Roast your chicken as normal or steam it as above and then when it has about 15 minutes left of cooking, take the foil off, tip a load of chilli jam on the top and finish in the oven… sticky, spicy loveliness!

Since Finalising our Original Sweet Chilli Jam we have been thinking up other ways in which you can use it. Sure, pulling it out the fridge and smothering your cheese in it will always be a good idea but this week we decided to make a flat bread (yes of course with cheese on too!)
Throughout lockdown we have been making these super easy flat breads and then suddenly it popped into my head to make one with Chilli Jam and of course my favourite, Brie!

1. Weigh out equal measures of Self Raising Flour & Natural Yoghurt (I used about 70g of each for this one) pinch of salt, then mix/knead.
2. Either Roll out or shape using your hands into a nice round shape.
3. Pop into a hot pan and wait for the flat bread to start rising.
4. Transfer to a tray and smother in Wild Goose chilli jam & brie and cook in a hot oven until lovely & bubbly.
5. Take out of the oven and finish with rocket.
